Stir Fry Chicken & Angel Hair Pasta
Isn’t it funny how you can completely forget about a recipe you used to make all the time? That’s what happened with this Stir Fry Chicken and Angel Hair Pasta Recipe. And then we moved to Florida and half our belongings are in storage right now, including a binder that holds most of my favorite recipes. Luckily many of these I have pinned. But, I did remember to pack my old recipe box in the correct packing box. Thank goodness! I have had the recipe box since we got married. It was a wedding gift and I immediately started adding my mom and both grandmothers recipes to it. You know, back when we wrote out recipe cards!

I flipped through the recipe box last week looking for something to catch my eye and I pulled out this gem! My mom shared this Stir Fry Chicken and Pasta dish with me in the late 90s and I made it all the time. My husband and I loved it and so did our one toddler. I kept making the chicken and pasta recipe for several years. And then I stopped.
Fresh Flavors in an Old Recipe
Do you get tired of making the same dishes all the time? I sure do and that’s probably why this recipe was set aside. But now I am so happy to eat it again. It feels fresh and new because it had been so long, and the flavors are so good!! And ironically, I have seen similar recipes lately. So it just goes to show you.

Stir Fry and Pasta?
Do the words “stir Fry Chicken” and “Angel Hair Pasta” seem odd to be together in the same recipe. I remember thinking that when I first read the recipe. But remember, this was the 1990s and stir fry was quite the rage. Everyone was buying electric woks. You do stir fry the chicken and veggies in this recipe, but now days we might just say saute the veggies and chicken. In others words, fry them in a small amount of olive oil.
Regardless of the words you use, the fresh veggies and seasonings really bring this dish together. Also, angel hair pasta cooks fast and it’s fun to ear. A nice change from spaghetti or fettucini.
Simple Tips for Stir Fry Chicken and Angel Hair Pasta
- Cut up ALL the veggies and chicken before you do anything else.
- Gather and measure all your other ingredients before you start to cook. This recipe cooks quickly.
- You can skip the heavy cream and use half and half, milk or coconut milk. It just won’t be as rich and yummy. Coconut milk in the can will give you a bit richer consistency if you don’t want to completely avoid the good fat. Remember we all need some fat in our diet!
- Put your water on to boil for the pasta when you start to cook your chicken. Add a few tablespoons of olive oil to the water to help loosen the pasta and keep it from clumping together while cooking.
- If your pasta gets done first, simply drain it, and put it back in the pot. Toss with a few tablespoons of olive oil and put the lid on. It will stay hot for quite a while.
- Tossing the pasta in olive oil is an absolute MuST! It will all clump together if you don’t.
- When everything is ready, you can mix the sauce mixture into the pasta or dish out the pasta onto plates and top with the sauce.
- The Stir Fry Chicken and veggies are also yummy over rice.
Ingredients for the chicken and pasta dish
Although the ingredient list for Stir Fry Chicken and Angel Hair Pasta might seem a bit long, it is a one dish meal so it has your protein, veggies and carbs all in one dish. You will want to thawed chicken because you will cut it up in about 1 inch chunks
The vegetables include mushrooms. Buy pre-sliced to speed up the meal prep. Baby Bella are a good option. The recipe calls for green pepper and a whole tomato. in these pictures, I swapped out a yellow pepper because that’s what I had, and a I halved these bite size Sunset Wild Wonders tomatoes. I usually get these at Costco but they are available at many supermarkets. I also used minced garlic in the jar to speed up the meal prepping. Stir Fry Chicken and Angel Hair Pasta
Ingredients
- 3/4 lb boneless, skinless chicken breasts, cut in 1inch chunks 2 breasts
- 2 tbsp olive oil, for cooking chicken & veggies will need additional for tossing pasta
- 1/4 lb sliced mushrooms
- 1/2 medium green pepper, chopped large, about 1 inch chunks
- 1 clove garlic, minced
- 1 medium tomato, chopped 1 cup of halved grape tomatoes
- 1 cup heavy cream or milk, coconut milk
- 1/2 tsp salt
- ground pepper, to taste
- 1/8 tsp crushed red pepper, or more
- 1/8 tsp thyme
- 1/4 tsp paprika
- 1 tbsp tomato paste
- 9 oz angel hair pasta
Instructions
- Chop and slice the chicken and vegetables.
- Put water on to boil for the pasta.
- Heat 2 tablespoons of olive oil in wok or skillet.
- Add chicken and stir fry until no longer pink, about 5 minutes.
- Remove chicken from pan.
- Add mushrooms, peppers and garlic to pan with drippings and stir fry 2 minutes
- Add tomatoes and cook one minute longer.
- Add cream, salt, pepper, red pepper, thyme, paprika, and tomato paste.
- Cook 2 minutes, stirring.
- Add pasta to boiling water and cook according to package directions. It cooks quickly!
- Return chicken to pan and cook about 5 minutes. It will thicken slightly is using heavy cream.
- Drain pasta, Pour back int the pot and toss in a few tablespoons of olive oil to prevent sticking.
- Serve sauce over pasta.
