Stir Fry Chicken and Angel Hair Pasta

Ingredients
  

  • 3/4 lb boneless, skinless chicken breasts, cut in 1inch chunks 2 breasts
  • 2 tbsp olive oil, for cooking chicken & veggies will need additional for tossing pasta
  • 1/4 lb sliced mushrooms
  • 1/2 medium green pepper, chopped large, about 1 inch chunks
  • 1 clove garlic, minced
  • 1 medium tomato, chopped 1 cup of halved grape tomatoes
  • 1 cup heavy cream or milk, coconut milk
  • 1/2 tsp salt
  • ground pepper, to taste
  • 1/8 tsp crushed red pepper, or more
  • 1/8 tsp thyme
  • 1/4 tsp paprika
  • 1 tbsp tomato paste
  • 9 oz angel hair pasta

Instructions
 

  • Chop and slice the chicken and vegetables.
  • Put water on to boil for the pasta.
  • Heat 2 tablespoons of olive oil in wok or skillet.
  • Add chicken and stir fry until no longer pink, about 5 minutes.
  • Remove chicken from pan.
  • Add mushrooms, peppers and garlic to pan with drippings and stir fry 2 minutes
  • Add tomatoes and cook one minute longer.
  • Add cream, salt, pepper, red pepper, thyme, paprika, and tomato paste.
  • Cook 2 minutes, stirring.
  • Add pasta to boiling water and cook according to package directions. It cooks quickly!
  • Return chicken to pan and cook about 5 minutes. It will thicken slightly is using heavy cream.
  • Drain pasta, Pour back int the pot and toss in a few tablespoons of olive oil to prevent sticking.
  • Serve sauce over pasta.
