boneless, skinless chicken breasts, cut in 1inch chunks
2 breasts

olive oil, for cooking chicken & veggies
will need additional for tossing pasta

sliced mushrooms
1/2

green pepper, chopped large, about 1 inch chunks

garlic, minced

tomato, chopped
1 cup of halved grape tomatoes

heavy cream
or milk, coconut milk

salt
ground
pepper, to taste

crushed red pepper, or more

thyme

paprika

tomato paste

angel hair pasta
Instructions
Chop and slice the chicken and vegetables.
Put water on to boil for the pasta.
Heat 2 tablespoons of olive oil in wok or skillet.
Add chicken and stir fry until no longer pink, about 5 minutes.
Remove chicken from pan.
Add mushrooms, peppers and garlic to pan with drippings and stir fry 2 minutes
Add tomatoes and cook one minute longer.
Add cream, salt, pepper, red pepper, thyme, paprika, and tomato paste.
Cook 2 minutes, stirring.
Add pasta to boiling water and cook according to package directions. It cooks quickly!
Return chicken to pan and cook about 5 minutes. It will thicken slightly is using heavy cream.
Drain pasta, Pour back int the pot and toss in a few tablespoons of olive oil to prevent sticking.
Serve sauce over pasta.
