Turkey Sweet Potato Chili

- ½ yellow onion
- 1 tbsp olive oil
- 3-4 garlic cloves
- 1 lb lean ground turkey (or chicken)
- ⅛ tsp pepper
- ½ tsp sea salt
- 2 tsp cumin
- 14 oz can of diced tomatoes
- 1-2 tbsp chili powder
- 1 tsp paprika
- 1 bay leaf
- 2-3 medium sweet potatoes, peeled and diced into 1/2 inch cubes 2 is usually fine.
- 1½ cups chicken broth
- chopped cilantro for garnish
Chop onions to whatever size you prefer in your chili.
Saute onion in a large pot with olive oil on medium heat.
Peel and chop sweet potatoes while your onion cooks.
Add garlic to the pot when the onion is starting to turn golden. Saute for a minute or two being careful not to burn the garlic.
Add tukey, salt, pepper and cumin to the pot, breaking up the meat into smaller pieces. Cook until turkey is no longer pink.
Add all the other ingredients to the pot. Stir and bring to a simmer.
Place lid on top and simmer for 25 minutes on medium low heat. Remove bay leaf.
Serve with cilantro as a garnish. Enjoy!
