Chocolate-Almond Energy Bites

Popping a Chocolate-Almond Energy Bite into your mouth is the easy part. Stopping at just one is where it gets hard! I’ve been making various energy balls for quite a while. I remember first trying a recipe when my kids were in grade school/middle school when we were headed on a camping trip with friends. It was a perfect little snack to have on hand throughout the day.

Not all energy balls are the same. Some, like the first ones I made, were more dessert than healthy. But, I will share this early energy ball version sometime because they were also very tasty! The great thing about energy bites is they require no baking and mix up quickly.

A Healthier Option

This Chocolate-Almond Energy Bite version offers a well balanced mix of protein, carbs, healthy fat AND omega 3 for an immunity boost. The Omega 3 comes from the flax seed. I’m not saying this is the healthiest snack in the world, but it covers all the bases. if you need a boost of energy for hiking, or just to go about your normal day, these energy balls are a great option.

Favorite Snacks

One of my favorite indulgences is a dark chocolate bar dipped in almond butter. Maybe that’s why I love these so much. Two favorite foods paired with other healthy ingredients makes them a great choice for a quick snacks.

Mix It Up with Coconut in your Energy Balls

I have to be honest. This original recipe that was shared by a fellow Arbonne protein lover called for COCONUT. I really don’t like coconut, so it is left out of my recipe. Add in a 1/4 to 1/2 a cup if you like. If you love coconut I’m sure they will taste amazing.

Simple Tips for Chocolate-Almond Energy Bites:

  • Mix by hand with a spoon. The dough will be thick. It’s okay to use your hands if you want too!
  • Be sure to melt the almond butter before you add it to the mixture. It will all blend together much easier.
  • Swap out for any nut butter you like. The peanut butter version tastes quite yummy!
  • Try a different flavor of protein powder or chips. I love coffee protein with Nestle coffee chips!
  • Place the balls on wax paper. They can be a little sticky.
  • Chill for a few hours, but feel free to eat a little while you wait. The chilling just makes them easier to handle and I think they good cold.
  • Store the energy bites in an air tight container in the refrigerator. They will last for a couple fo weeks.
  • Freeze them for up to three months. This is handy if you just want to occasionally snack on them.

Ingredients

Most of these ingredients I purchase in bulk bags at Costco. It’s more cost effective and then I have the ingredients on hand for multiple batches, or other things I like to make or bake. Aldi is another good option for finding most of these ingredients for a better price. Of course, you can find all these ingredients at Publix, Kroger, or wherever you like to shop.

The protein powder in the recipe is purchase online from Arbonne. It is “hands-down” my favorite protein shake mix. The Simply 1 Pea Protein Chocolate Shake Mix offers 20g of protein and less then one gram of sugar. It comes in several flavors and I love to swap out the coffee flavor in this recipe and add Nestle coffee chips instead of chocolate chips. Chocolate Almond Energy Bites

Quick little bites to give you energy just when you need it. The energy bites are made with healthy ingredients, but also help when you are craving something sweet.

Ingredients
  

  • 1 cup almond butter (melted)
  • 1/3 cup Chocolate Protein Powder (I use Arbonne Simply 1 Feel Fit Pea Protein. It has less than 1 gram of sugar per serving.)
  • 2 cups dry oats ( prefer old-fashioned instead of quick-cooking oats.)
  • 1 cup ground flax seed
  • cup honey
  • cup mini or regular semi-sweet chocolate chips

Instructions
 

  • Melt the almond butter in a medium-size mixing bowl in the microwave, or melt the butter on the stove top.
  • Add all the remaining ingredients in the mixing bowl
  • Stir until all the ingredients are well mixed
  • Use a spoon to scoop out a small amount of mixture and shape into a ball with your hands. Make sure the mixture is tightly packed in a ball or they can fall apart.
  • Place the energy bites on waxed paper as you make them. They will be a bit sticky.
  • Mix will make approximately 40 balls
  • Store the energy bites in the refrigerator up to a week. They don't have to be refrigerated, but they are a bit sticky to eat if they are stored at room temperature.
